Our FIRST radishes - and the answer to: what can you do with radish leaves?

Okay, I know this isn't a HUGE bunch, nor are they HUGE in size.  However, I was making a salad and just couldn't resist pulling up a couple to see how far along they've come.  These little babies were FRESH and CRUNCHY!  Added just the right amount of zing to my salad!


And here is a sneak peek at our Celery...it's growing fast!


 You've pulled your first radishes and the leaves are so beautiful you just hate to throw them away, right? 

Okay, now the answer to the question on every Radish lovers mind.  Can you eat radish leaves? 
And the answer is:  YES you CAN!  Ever had Radish Top Soup? 
Radish top soup its amazing!  Give it a try.

Saute tops with onions and garlic in Olive Oil. Bake 2 potatoes, skin, and dice. Add tops onions garlic potatoes into blender with milk and half and half. blend and then heat! I put crumbled bacon on top!  

Absolutely DELICIOUS!

Go ahead, enjoy your radishes in a whole new way! (You can even enjoy some leaves in your Salad today!)

North Florida Vegetable Gardening Guide

Here’s a list of commonly grown spring vegetables in North Florida that should be planted before the end of April:


• Bush & Pole Beans

• Cantaloupes

• Sweet Corn

• Cucumbers

Other commonly grown vegetables in North Florida can be planted beyond April and in to the summer months, such as:

First Spinach from the greenhouse

Here is our first spinach harvest...it makes a great omelet with some mushrooms and cheese or even adds some zest to a salad!

Okay, I know it's not as much as the lettuce harvest, but I only have a couple spinach plants, as I am the only one who eats it.

Our Second Lettuce Harvest

It's truly amazing at how fast lettuce grows, once established.  We are on our second harvest in the past couple of weeks.  Our first harvest provided salads for approximately 4 dinners (x3).  This harvest is slightly larger, so we estimate at least 6 dinners (x3).

If you do the math you are looking at 30 salads.  Now that's a lot to talk about!  I do average Manny's salad as a normal size because that is what he eats.  Ever since we planted our own lettuce he just cannot get enough salad!  Of course he has to have his ranch, but that's okay with me.

We have 9 lettuce plants and if I remember right they were like $2.98 for the 9 pack, I would say they have paid for themselves and we will get yet another harvest out of the same batch.  Who knew a lettuce plant would produce three times after being cut back, I didn't.  Very cost effective and so DELICIOUS!


Our first Strawberries

Today we just couldn't resist any longer.  We had two strawberries just calling out our names.  Manny says they were screaming out our names :-). 

All kidding aside, they were the best strawberries we have ever eaten :-).

Food for the soul


Today as I spent time transplanting some seedlings that were ready to take off, I couldn't help but think of being fruitful.  Sometimes I think we all think that being busy means we are being fruitful.  However, today I realized it's not the same thing.

I mean how many times have you told someone how busy you are?  I've done it many times myself.  I think for some reason we feel important when we can tell everyone just how busy we are.  The bible says to be fruitful - not busy.  Fruitfullness (if that's a word) is a blessing in ones life.  It blesses us, so we may bless others.  Fruitful people leave tracks that people want to follow.  I want to be like that.

I'm going to concentrate on being more fruitful.  One key ingredient I think is to pray over things before we start them and ask ourself:  Is it busy, or is it fruitful? 

Deut. 28:8 “The Lord will command the blessing on you in your storehouses and in all to which you set your hand, and He will bless you in the land which the Lord your God is giving you.
